Aquavit has travelled through Nordic drinking culture for more than five centuries. Traditionally distilled from grain or potato and flavoured with caraway, dill and spice, it became part of the rituals surrounding the Scandinavian table. It is a drink for gatherings, celebrations and long meals. Something poured with food, rather than apart from it.
Its name comes from the Latin aqua vitae: water of life.
Where gin builds its identity around juniper, aquavit is led by caraway or dill. The profile is savoury, herbal and gently spiced. Some expressions carry citrus, anise or cardamom. Others are softened through time in oak. The spirit beneath remains present, giving aquavit a weight and earthiness that feels distinctly its own.

Our House Martini is built around Australian aquavit from Never Never Distilling Co. It takes the familiar shape of a Martini and shifts it slightly: savoury, herbaceous and grounded, with a distinctly Australian expression of a Scandinavian spirit.
